Ingredients
- 1 pound medium carrots
- 1/2 cup chopped fresh cilantro
- 1/4 cup finely chopped onion
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ripe avocados
Instructions
- If carrots are large, halve them lengthwise, then cut diagonally into 2 inch pieces.
- Cook carrots in a pot of boiling, salted water until just tender, 5-6 minutes.
- Drain and transfer carrots to a bowl of ice water. Let the carrots chill for 5 mins, then drain and pat dry. While carrots cool and dry, stir together cilantro, onion, oil, lemon juice, garlic, salt and pepper.
- Pour the mixture over carrots in a large bowl. Mix. Cut avocado into ½ inch pieces, add, and gently toss together.
- Serve at room temp or chilled.
